I am a registered nurse and a nutritional therapy consultant with a passion for cooking, baking and healthy eating. Rebel Oven is a culmination of all these things. I love a sweet treat maybe even more than the next person but working in healthcare exposed me repeatedly to the devastating effects of what a diet rich in sugar and refined carbohydrates can do to one’s health. I discovered the Paleo diet in 2012 and this opened me up to a whole world of alternative cooking and baking where it was possible to still enjoy those rich and sinful foods but in a healthier way.
Over the years as I studied, worked and baked, I learned more about the detrimental effects that gluten and grains can have on the body from diabetes to autoimmune diseases to pain disorders and I wanted to prove that people could give up these things and still have a rewarding alternative.
I began baking exclusively with nut and seed flours and bringing my offerings to work, pot lucks and birthday parties. People were amazed at how good these grain-free desserts tasted and how they didn't feel like a giant slug after the ensuing sugar crash of a traditional baked good. The only problem? There is no where to get these items! Gluten-free options are pretty much everywhere but I dare you to try and find a variety of grain-free or Paleo treats in a bakery-they just aren't available.
And with that Rebel Oven was born. As a nurse and a nutrition consultant, I am on a mission to spread the knowledge that I have in hopes of improving people's overallhealth and enriching their quality of life. And as a grain-free baker and sweets lover, I want people to occassionally indulge and feel good about it!
